Ingredients

Scale

Main Ingredients:

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 3 cups beef broth (low-sodium recommended)
  • 3 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas (added at the end)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste

Optional Additions & Substitutions:

  • For a low-carb version, replace potatoes with turnips or cauliflower.
  • Want extra richness? Add a splash of red wine to the broth.
  • Prefer a thicker stew? Add 2 tbsp cornstarch mixed with water at the end.

Instructions

Step1: Prepare the Ingredients

  • Chop all vegetables and cut the beef into small, even-sized cubes.

Step2: Brown the Beef (Optional but Recommended)

  • Heat a large skillet over medium-high heat.
  • Add a bit of oil and sear the beef pieces until browned on all sides. This step enhances flavor.

Step3: Combine Ingredients in the Slow Cooker

  • Transfer the browned beef to the slow cooker.
  • Add potatoes, carrots, onions, and garlic.
  • Stir in beef broth, tomato paste, Worcestershire sauce, and seasonings.

Step4: Slow Cook to Perfection

  • Cover and cook on low for 8 hours or high for 4-5 hours until the beef is tender.
  • Stir in frozen peas during the last 30 minutes of cooking.

Step5: Serve & Enjoy!

  • Remove the bay leaf and give the stew a final stir.
  • Taste and adjust seasonings if needed.
  • Serve hot, garnished with fresh parsley.

Notes

  • For extra flavor, use beef bone broth instead of regular broth.
  • If the stew is too thin, mix cornstarch with water and stir it in during the last 20 minutes.
  • For deeper richness, add a splash of balsamic vinegar or red wine.
