- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional, for spice)
- ½ cup vegetable oil (for frying)
For the Sauce:
- 2 cups marinara sauce (store-bought or homemade)
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
For Topping:
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped (for garnish)
Instructions
Step1: Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Slice the chicken breasts in half lengthwise to create four thinner cutlets.
- Lightly season both sides of the chicken with salt, pepper, and garlic powder.
Step2: Coat the Chicken
- Set up three shallow bowls:
- One with flour.
- One with beaten eggs.
- One with a mixture of breadcrumbs, Parmesan, oregano, onion powder, and red pepper flakes.
- Dredge each chicken cutlet in flour, dip in egg, then coat in the breadcrumb mixture. Press firmly so the coating sticks.
Step3: Fry the Chicken
- Heat vegetable oil in a large skillet over medium-high heat.
- Fry each chicken cutlet for 2-3 minutes per side, until golden brown and crispy.
- Transfer to a paper towel-lined plate to remove excess oil.
Step4: Assemble and Bake
- In a baking dish, spread ½ cup marinara sauce on the bottom.
- Place the fried chicken cutlets on top.
- Spoon more marinara sauce over each piece.
- Sprinkle generously with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Step5: Serve and Enjoy
- Garnish with fresh basil.
- Serve immediately with pasta, garlic bread, or a fresh salad.
Notes
- Use fresh ingredients – Fresh basil, garlic, and Parmesan enhance the flavor.
- Don’t skip frying – Frying the chicken before baking ensures a crispy texture.
- Pound the chicken – Flattening the chicken ensures even cooking.
- Let it rest – Allowing the chicken to rest after frying prevents sogginess.
