Ingredients

Scale

For the Chicken:

  • 2 large boneless, skinless chicken breasts, halved lengthwise
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional, for spice)
  • ½ cup vegetable oil (for frying)

For the Sauce:

  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)

For Topping:

  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

Step1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts in half lengthwise to create four thinner cutlets.
  3. Lightly season both sides of the chicken with salt, pepper, and garlic powder.

Step2: Coat the Chicken

  1. Set up three shallow bowls:
    • One with flour.
    • One with beaten eggs.
    • One with a mixture of breadcrumbs, Parmesan, oregano, onion powder, and red pepper flakes.
  2. Dredge each chicken cutlet in flour, dip in egg, then coat in the breadcrumb mixture. Press firmly so the coating sticks.

Step3: Fry the Chicken

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Fry each chicken cutlet for 2-3 minutes per side, until golden brown and crispy.
  3. Transfer to a paper towel-lined plate to remove excess oil.

Step4: Assemble and Bake

  1. In a baking dish, spread ½ cup marinara sauce on the bottom.
  2. Place the fried chicken cutlets on top.
  3. Spoon more marinara sauce over each piece.
  4. Sprinkle generously with mozzarella and Parmesan cheese.
  5. Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Step5: Serve and Enjoy

  • Garnish with fresh basil.
  • Serve immediately with pasta, garlic bread, or a fresh salad.

Notes

  • Use fresh ingredients – Fresh basil, garlic, and Parmesan enhance the flavor.
  • Don’t skip frying – Frying the chicken before baking ensures a crispy texture.
  • Pound the chicken – Flattening the chicken ensures even cooking.
  • Let it rest – Allowing the chicken to rest after frying prevents sogginess.
