Inspired by the Southern classic, this recipe simplifies the process using refrigerated biscuit dough, making it a quick and effortless meal. Whether you’re cooking for a weeknight dinner or craving comfort food, this homestyle chicken and dumplings is a must-try.

Ingredients

Scale

Main Ingredients:

  • 2 cups cooked, shredded chicken (rotisserie or homemade)
  • 1 can (10.5 oz) cream of chicken soup
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon poultry seasoning
  • 2 cups frozen mixed vegetables (peas, carrots, corn)

For the Dumplings:

  • 1 can (16 oz) refrigerated biscuits (such as Pillsbury)
  • 1 tablespoon butter (melted)
  • 1/2 teaspoon parsley (optional, for garnish)

Instructions

Step1: Prepare the Base

  1. In a large pot, add chicken broth and bring it to a simmer over medium heat.
  2. Stir in the cream of chicken soup, milk, and seasonings (garlic powder, onion powder, poultry seasoning, salt, and pepper).
  3. Add the shredded chicken and frozen vegetables. Let it simmer for 5-7 minutes, stirring occasionally.

Step2: Prepare the Dumplings

  1. Open the refrigerated biscuit can and cut each biscuit into quarters.
  2. Lightly toss the biscuit pieces in melted butter for extra flavor.

Step3: Add the Dumplings

  1. Reduce heat to low and drop the biscuit dough pieces into the simmering broth, stirring gently so they don’t stick together.
  2. Cover the pot and let the dumplings cook for 15 minutes, stirring occasionally. The biscuits will puff up and become soft dumplings.

Step4: Serve and Enjoy

  1. Once the dumplings are fully cooked, garnish with fresh parsley if desired.
  2. Serve hot and enjoy a bowl of comfort food at its best!

Notes

  • Use rotisserie chicken for a quick and easy shortcut.
  • For a richer broth, replace half the chicken broth with heavy cream.
  • Add more veggies like celery and mushrooms for extra nutrition.
  • Thicken the broth by mixing 1 tablespoon cornstarch with 2 tablespoons cold water and stirring it in before adding dumplings.
