Description

These Double Chocolate Strawberry Cupcakes feature ultra-moist chocolate cake filled with rich chocolate ganache and topped with luscious strawberry buttercream made from real strawberries.   • 1 cup (120g) all-purpose flour
  • 1/2 cup (40g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (120ml) hot water or brewed coffee
  • 1 teaspoon vanilla extract
  • 3 oz (85g) semi-sweet chocolate, melted
  • 1/2 cup (120ml) heavy cream
  • 4 oz (115g) semi-sweet or dark chocolate, finely chopped
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (60ml) reduced strawberry puree or freeze-dried strawberry powder
  • 2 1/2 cups (300g) powdered sugar
  • 1 tablespoon milk or cream, as needed
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin. Sift together flour, cocoa powder, baking powder, baking soda, and salt.
  2. Whisk oil, sugar, eggs, and vanilla. Stir in buttermilk and melted chocolate.
  3. Alternate adding dry ingredients and hot water or coffee, mixing just until smooth.
  4. Fill liners 2/3 full and bake 18–22 minutes until a toothpick comes out clean. Cool completely.
  5. Heat cream until simmering, pour over chocolate, rest 1–2 minutes, then stir until smooth.
  6. Core cooled cupcakes and fill with 1–2 teaspoons ganache.
  7. Beat butter until creamy. Add strawberry, powdered sugar, salt, and milk until fluffy.
  8. Pipe or spread frosting and garnish as desired.
