This Dorito Taco Meatloaf is a fun and flavorful twist on classic meatloaf, combining the comforting taste of tacos with the crunchy texture of Doritos and melty cheese. It’s an easy, weeknight-friendly meal that’s packed with bold Tex-Mex flavors.

  • 1.5 lbs lean ground beef
  • 2 cups crushed Dorito chips
  • 1 cup finely chopped onion
  • 1/4 cup taco seasoning
  • 2 eggs
  • 1/3 cup milk
  • 1 cup taco sauce
  • 1 cup shredded Monterey Jack cheese with jalapeños

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with foil and lightly spray with nonstick spray.
  2. In a large bowl, combine the ground beef, crushed Doritos, chopped onion, taco seasoning, eggs, and milk. Mix gently until just combined.
  3. Shape the meat mixture into a loaf directly on the prepared baking sheet, or pack it into a loaf pan and then flip it onto the baking sheet.
  4. Bake the meatloaf uncovered for 40 minutes.
  5. Remove the meatloaf from the oven. Spread the taco sauce evenly over the top, then sprinkle with the shredded Monterey Jack cheese and a few additional crushed Doritos.
  6. Return the meatloaf to the oven and bake for another 10 minutes, or until the cheese is melted and the internal temperature reaches 160°F.
  7. Let the Dorito Taco Meatloaf rest for 10 minutes before slicing and serving warm.
