Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup dry red wine (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 1.5 lbs potatoes, peeled and cubed
- 1 lb carrots, peeled and sliced
- 1/2 lb celery, sliced
- 1 cup frozen peas
Instructions
- In a bowl, toss beef cubes with flour, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches, then transfer to the crockpot.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Transfer the onion and garlic mixture to the crockpot.
- Pour in beef broth and red wine (if using). Stir in tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
- Add potatoes, carrots, and celery to the crockpot.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef and vegetables are tender.
- Stir in frozen peas during the last 30 minutes of cooking.
- Remove bay leaves before serving. This crockpot beef stew is best served hot.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the crockpot during the last hour of cooking.
