Description

Crock Pot White Chicken Chili is a creamy, hearty, and nourishing slow-cooked dish made with tender chicken, white beans, green chilies, and warming spices.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 pound (450g) boneless, skinless chicken breasts
  • 1½ teaspoons ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt (or to taste)
  • 2 cans (15 ounces / 425g each) white beans, drained and rinsed
  • 1 can (4 ounces / 113g) diced green chiles
  • 2 cups (480ml) low-sodium chicken broth
  • 1 package (8 ounces / 226g) cream cheese, softened and cubed
  • ½ cup (120g) plain Greek yogurt
  • Juice of 1 lime
  • Chopped cilantro
  • Sliced avocado
  • Shredded cheese
  • Tortilla chips

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced onions and cook until translucent, about 3–4 minutes. Stir in garlic and cook another minute until fragrant.
  2. Place chicken breasts at the bottom of the Crock Pot. Top with onions and garlic. Sprinkle in cumin, coriander, oregano, chili powder, salt, and pepper.
  3. Pour in white beans, green chilies, and chicken broth. Stir gently to combine.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until the chicken is tender and fully cooked.
  5. Remove chicken, shred with two forks, then return it to the slow cooker.
  6. Add softened cream cheese and Greek yogurt. Stir until melted and smooth. Add lime juice and stir again.
  7. Ladle into bowls and top with cilantro, avocado, cheese, or tortilla strips as desired.
