Description
Crock Pot White Chicken Chili is a creamy, hearty, and nourishing slow-cooked dish made with tender chicken, white beans, green chilies, and warming spices.

- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 pound (450g) boneless, skinless chicken breasts
- 1½ teaspoons ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon dried oregano
- ½ teaspoon chili powder
- ¼ teaspoon ground black pepper
- ½ teaspoon salt (or to taste)
- 2 cans (15 ounces / 425g each) white beans, drained and rinsed
- 1 can (4 ounces / 113g) diced green chiles
- 2 cups (480ml) low-sodium chicken broth
- 1 package (8 ounces / 226g) cream cheese, softened and cubed
- ½ cup (120g) plain Greek yogurt
- Juice of 1 lime
- Chopped cilantro
- Sliced avocado
- Shredded cheese
- Tortilla chips
Instructions
- In a skillet, heat olive oil over medium heat. Add diced onions and cook until translucent, about 3–4 minutes. Stir in garlic and cook another minute until fragrant.
- Place chicken breasts at the bottom of the Crock Pot. Top with onions and garlic. Sprinkle in cumin, coriander, oregano, chili powder, salt, and pepper.
- Pour in white beans, green chilies, and chicken broth. Stir gently to combine.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until the chicken is tender and fully cooked.
- Remove chicken, shred with two forks, then return it to the slow cooker.
- Add softened cream cheese and Greek yogurt. Stir until melted and smooth. Add lime juice and stir again.
- Ladle into bowls and top with cilantro, avocado, cheese, or tortilla strips as desired.
