- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups low-sodium chicken broth
- 1 (13.5 oz) can full-fat coconut milk
- 2 stalks lemongrass, bruised and cut into 3-inch pieces
- 2 inches fresh ginger, peeled and sliced
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh cilantro, plus more for garnish
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the chicken, chicken broth, coconut milk, lemongrass, ginger, garlic, fish sauce, lime juice, brown sugar, and red pepper flakes (if using).
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the lemongrass pieces. Stir in the chopped cilantro and season with salt and pepper to taste.
- Serve the Crock Pot Thai Ginger Chicken Soup hot, garnished with additional cilantro and a squeeze of lime juice.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
