Ingredients

Scale

Main Ingredients:

  • 1 lb Italian sausage (mild or spicy, depending on preference)
  • 1 package (16 oz) potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese, grated
  • ½ tsp red pepper flakes (optional, for spice)
  • Salt & black pepper to taste

Optional Substitutions:

  • Swap heavy cream for coconut milk for a lighter version
  • Use turkey or chicken sausage instead of pork for a leaner dish
  • Add mushrooms or zucchini for extra veggies

Instructions

Step1: Cook the Sausage

  • Heat olive oil in a large skillet over medium heat.
  • Add Italian sausage, breaking it apart with a spoon, and cook until browned (about 5 minutes).
  • Remove excess grease if necessary.

Step2: Sauté the Aromatics

  • Add onions and garlic to the pan and sauté until fragrant (about 2 minutes).
  • Stir in the cherry tomatoes and cook until softened.

Step3: Create the Creamy Sauce

  • Pour in chicken broth and heavy cream, stirring well.
  • Add Parmesan cheese, red pepper flakes, salt, and black pepper. Simmer for 3 minutes.

Step4: Cook the Gnocchi

  • Add gnocchi directly to the sauce (no need to pre-boil).
  • Let it cook for 5-7 minutes, stirring occasionally, until the gnocchi is soft and tender.

Step5: Add the Final Touches

  • Stir in baby spinach and let it wilt into the sauce.
  • Taste and adjust seasoning as needed.

Step6: Serve & Enjoy!

  • Garnish with extra Parmesan cheese and fresh basil.
  • Serve warm with garlic bread or a side salad.

Notes

  • Use fresh gnocchi if possible for the best texture.
  • If the sauce is too thick, add a splash of milk or broth to loosen it.
  • For extra flavor, try using smoked sausage or chorizo instead of Italian sausage.
  • Store-bought gnocchi works well, but homemade gnocchi will take this dish to another level!
