Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup pesto sauce
  • 1/4 cup grated Parmesan cheese
  • Optional: 1/2 cup cooked pasta or vegetables like broccoli

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or pot over medium-high heat.
  3. Sear chicken until browned on both sides and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Pour in heavy cream and bring to a simmer.
  6. Stir in pesto sauce and Parmesan cheese until well combined and the sauce is creamy.
  7. Return the cooked chicken to the skillet. If adding pasta or vegetables, add them now.
  8. Toss everything to coat the chicken and ingredients in the creamy pesto sauce.
  9. Simmer for a few minutes until the sauce has thickened and everything is heated through.
  10. Serve your delicious creamy pesto chicken immediately.
