- 1 pound linguine
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1.5 pounds lobster meat, cooked and chopped
- 1/2 cup dry white wine
- 1.5 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook linguine according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta cooks, heat olive oil and butter in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped lobster meat to the skillet and cook for 2-3 minutes until heated through.
- Pour in the white wine and let it simmer for 2 minutes, scraping up any browned bits.
- Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
- Add the cooked linguine to the skillet with the sauce. Toss to coat evenly.
- If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve this creamy lobster linguine immediately.
