  • 2 tsp fennel seeds
  • 2 tbsp pine nuts
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cups fresh gnocchi
  • 3 cloves garlic (minced)
  • 1 red chili (deseeded and finely chopped)
  • 2 medium tomatoes (chopped)
  • 3 1/3 cups baby spinach (washed)
  • 1/3 cup crumbled feta
  • Freshly ground black pepper

Instructions

  1. Crush the fennel seeds using a pestle and mortar.
  2. Toast pine nuts in a frying pan over medium-high heat until browned; set aside.
  3. In the same pan, heat butter and olive oil until bubbling; add gnocchi and fry until golden brown.
  4. Return crushed fennel seeds to the pan and toast briefly.
  5. Sauté minced garlic and chopped chili for a couple of minutes until fragrant.
  6. Add chopped tomatoes; cook until softened.
  7. Stir in baby spinach until wilted.
  8. Lower heat, mix in fried gnocchi and crumbled feta gently.
  9. Serve immediately topped with toasted pine nuts and black pepper.
