- 1 lb (450 g) boneless chicken
- 1/2 cup (120 ml) buffalo sauce
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) shredded mozzarella cheese
- 1/2 cup (50 g) grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a rolling boil.
- Add penne pasta and cook until al dente, according to package instructions.
- Reserve about a cup of starchy pasta water, then drain the pasta.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook chicken for 5-7 minutes on each side until golden brown and cooked through.
- Remove chicken from skillet and let it rest before slicing into bite-sized pieces.
- Add minced garlic to the skillet and sauté for about a minute until fragrant.
- Pour in buffalo sauce and stir to combine with chicken and garlic.
- Add heavy cream and half of the mozzarella and Parmesan cheese to the sauce.
- Stir in reserved pasta water if the sauce is too thick, until desired consistency.
- Add cooked penne and sliced chicken to the skillet, tossing to coat in sauce.
