  • 2 (5.2 oz) packages Boursin Cheese (Garlic and Herb)
  • 2 pints Cherry or Grape Tomatoes
  • 3 to 4 Tablespoons Extra Virgin Olive Oil
  • 4 Garlic Cloves, minced
  • Salt and Pepper to taste
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • 10 to 16 ounces Pasta (penne, rigatoni, or similar)
  • 1/2 cup Pasta Water (reserved)
  • 1/4 cup Fresh Basil (about 6 leaves), torn
  • 1 cup Fresh Baby Spinach (optional)
  • 1/2 cup Freshly Grated Parmesan Cheese

Instructions

  1. Bring a large pot of salted water to boil. Halve the tomatoes and mince the garlic. Let Boursin sit at room temperature.
  2. Preheat oven to 425°F (220°C). Toss halved tomatoes with 2 tbsp olive oil, half the garlic, salt, and pepper on a baking sheet. Roast for 12-15 minutes until blistered and slightly charred.
  3. Cook pasta in boiling water until al dente, 1 minute less than package instructions. Reserve 1/2 cup pasta water before draining.
  4. In the now-empty pasta pot, heat remaining olive oil over medium. Sauté remaining garlic and red pepper flakes for 30 seconds.
  5. Add both packages of Boursin cheese to the pot and melt gently over medium-low heat until creamy.
  6. Return drained pasta to the pot. Add roasted tomatoes with juices and toss to combine.
  7. Add pasta water gradually to reach desired sauce consistency. Fold in spinach (if using) and half the Parmesan.
  8. Serve in warmed bowls. Garnish with torn basil, remaining Parmesan, and fresh black pepper.
