- 2 (5.2 oz) packages Boursin Cheese (Garlic and Herb)
- 2 pints Cherry or Grape Tomatoes
- 3 to 4 Tablespoons Extra Virgin Olive Oil
- 4 Garlic Cloves, minced
- Salt and Pepper to taste
- 1/2 teaspoon Red Pepper Flakes (optional)
- 10 to 16 ounces Pasta (penne, rigatoni, or similar)
- 1/2 cup Pasta Water (reserved)
- 1/4 cup Fresh Basil (about 6 leaves), torn
- 1 cup Fresh Baby Spinach (optional)
- 1/2 cup Freshly Grated Parmesan Cheese
Instructions
- Bring a large pot of salted water to boil. Halve the tomatoes and mince the garlic. Let Boursin sit at room temperature.
- Preheat oven to 425°F (220°C). Toss halved tomatoes with 2 tbsp olive oil, half the garlic, salt, and pepper on a baking sheet. Roast for 12-15 minutes until blistered and slightly charred.
- Cook pasta in boiling water until al dente, 1 minute less than package instructions. Reserve 1/2 cup pasta water before draining.
- In the now-empty pasta pot, heat remaining olive oil over medium. Sauté remaining garlic and red pepper flakes for 30 seconds.
- Add both packages of Boursin cheese to the pot and melt gently over medium-low heat until creamy.
- Return drained pasta to the pot. Add roasted tomatoes with juices and toss to combine.
- Add pasta water gradually to reach desired sauce consistency. Fold in spinach (if using) and half the Parmesan.
- Serve in warmed bowls. Garnish with torn basil, remaining Parmesan, and fresh black pepper.
