Description
This Creamy Beef Stroganoff recipe features tender, juicy sirloin steak strips smothered in a rich, savory mushroom sauce made with sour cream, Dijon mustard, and smoked paprika. It’s a classic comfort food dish perfect for a cozy dinner, easy to prepare, and feels indulgent.
Ingredients
- 1 lb sirloin steak or filet mignon, thinly sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1/2 tsp smoked paprika
- 1 tbsp Dijon mustard
- 1/4 cup dry white wine or beef broth
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 3/4 cup sour cream or crème fraîche
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- Salt and pepper to taste
- 8 oz cooked egg noodles for serving
- 1 tbsp chopped parsley for garnish (optional)
- Extra black pepper and Parmesan cheese (optional)
Instructions
- Season the thinly sliced beef strips with salt and black pepper. Heat olive oil and butter in a large skillet over medium-high heat. Add the beef in a single layer and sear for about 1–2 minutes on each side until nicely browned. Do not overcrowd the pan; cook in batches if needed. Transfer the browned beef to a plate and set aside.
- In the same skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3 minutes. Stir in the sliced mushrooms and cook until they are golden brown, approximately 5 minutes. Sprinkle smoked paprika and Dijon mustard over the mushroom mixture, stirring well to coat.
- Pour in the dry white wine or beef broth. Scrape the bottom of the pan to lift all the flavorful browned bits. Allow it to simmer for about 2 minutes to cook off the alcohol and concentrate the flavor.
- Add beef broth and Worcestershire sauce to the skillet, stirring to combine. Lower the heat and stir in the sour cream, ensuring it mixes smoothly without curdling. Stir in fresh thyme and adjust seasoning with salt and pepper to taste.
- Return the seared beef strips to the skillet, tossing them gently in the creamy sauce for 1–2 minutes until warmed through. Serve this creamy beef stroganoff immediately over cooked egg noodles, rice, or mashed potatoes. Garnish with chopped parsley and freshly cracked black pepper for an elegant finish.
Notes
- For the best results with this beef stroganoff recipe, avoid overcooking the beef; a quick sear at high heat is key to keeping it tender.
- Using crème fraîche instead of sour cream will add extra richness to your stroganoff.
- Opt for good-quality broth and wine for the most flavorful stroganoff sauce.
- This classic beef stroganoff is best enjoyed fresh.
