- 1 cup fresh or frozen cranberries
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- Preheat the oven to 375°F. Grease an 8×8-inch baking pan.
- In a food processor, pulse the flour, butter, 1/2 cup sugar, and salt until it resembles coarse crumbs. Press the mixture into the prepared pan.
- Bake for 18-20 minutes, until lightly golden. Allow to cool completely.
- In a saucepan, combine the cranberries, 1 cup sugar, eggs, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until thickened, about 10 minutes.
- Spread the cranberry curd over the cooled crust.
- Bake for an additional 20-25 minutes, until the center is set. Allow to cool completely before cutting into bars.
- Dust the bars with powdered sugar before serving.
