  • 1 (9-inch) pie crust (store-bought or homemade)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 2 tablespoons orange juice
  • 1 tablespoon cornstarch
  • 1 teaspoon orange zest (optional)
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a saucepan, combine cranberries, sugar, orange juice, and zest. Cook 8–10 minutes until cranberries burst and mixture thickens. Stir in cornstarch and cook 1 more minute. Cool completely.
  2. Set oven to 375°F (190°C). Place pie crust into a 9-inch dish.
  3. Beat cream cheese, sugar, egg, and vanilla until smooth. Spread into the unbaked crust.
  4. Spread the cooled cranberry filling gently over the cream cheese layer.
  5. Mix flour, brown sugar, cinnamon, and salt. Cut in cold butter until coarse crumbs form.
  6. Sprinkle crumbs evenly over the cranberry layer. Bake 40–45 minutes until golden and set.
  7. Cool fully, then chill 2 hours for clean slices. Serve plain or with whipped cream.
