- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper (any color)
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, diced tomatoes, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, garlic powder, and cumin.
- Pour the dressing over the vegetable mixture and stir to coat everything evenly.
- Season with salt and pepper to taste.
- Chill the Cowboy Caviar dip in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve the dip chilled with tortilla chips, crackers, or as a topping for tacos or burritos.
