  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15 ounce) can baked beans, undrained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 teaspoon liquid smoke (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the ground beef, onion, and green bell pepper over medium heat until the beef is browned and the vegetables are tender. Drain off any excess grease.
  2. Stir in the kidney beans, pinto beans, baked beans, and diced tomatoes with green chilies.
  3. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, chili powder, and liquid smoke (if using).
  4. Pour the sauce mixture over the bean and meat mixture. Stir to combine.
  5. Bring the cowboy beans to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a deeper flavor, simmer longer.
  6. Season with salt and pepper to taste.
  7. Serve this delicious cowboy beans dish hot.
