Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin.
- Whisk flour, cornmeal, sugar, baking powder, and salt in a large bowl.
- In another bowl, whisk buttermilk, egg, and honey until smooth.
- Make a well in dry ingredients and pour in the wet mixture. Stir gently.
- Stir in melted butter until just combined.
- Divide batter into muffin cups and bake for 20–22 minutes.
- Cool in the pan for 10 minutes before serving.
