- 2 tablespoons brewed coffee, cooled
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, followed by the cooled brewed coffee and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined, being careful not to overmix.
