- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger

- 1 egg
- ½ cup pumpkin puree (not pie filling)
- ¼ cup brown sugar (packed)
- 2 tablespoons granulated sugar
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 tablespoons butter, melted
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Heat oven to 350°F (175°C). Grease a mini muffin pan or line with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In another bowl, beat egg, pumpkin puree, sugars, oil, and vanilla until smooth.
- Stir dry ingredients into wet until just combined. Do not overmix.
- Spoon batter into muffin cups (¾ full). Bake 10–12 minutes, until a toothpick comes out clean.
- While warm, brush each bite with melted butter and roll in cinnamon sugar. Place on a wire rack to cool slightly.
- Enjoy warm or at room temperature. Best eaten fresh!
