Soft and Sweet Cinnamon Sugar Pumpkin Bites – The Perfect Fall Treat


Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 egg
  • ½ cup pumpkin puree (not pie filling)
  • ¼ cup brown sugar (packed)
  • 2 tablespoons granulated sugar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Heat oven to 350°F (175°C). Grease a mini muffin pan or line with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat egg, pumpkin puree, sugars, oil, and vanilla until smooth.
  4. Stir dry ingredients into wet until just combined. Do not overmix.
  5. Spoon batter into muffin cups (¾ full). Bake 10–12 minutes, until a toothpick comes out clean.
  6. While warm, brush each bite with melted butter and roll in cinnamon sugar. Place on a wire rack to cool slightly.
  7. Enjoy warm or at room temperature. Best eaten fresh!
