Ingredients

  • 5 tablespoons light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ cup cornstarch
  • ¼ teaspoon kosher salt
  • ½ cup light brown sugar
  • ⅓ cup all-purpose flour
  • ½ cup rolled oats
  • ½ tablespoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¼ cup unsalted butter, melted
  • ½ cup unsalted butter, room temperature
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 3 large egg yolks, room temperature
  • 2 teaspoons vanilla paste or extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ cup powdered sugar
  • 34 teaspoons water or milk

Instructions

  1. Prepare the cinnamon filling: Mash together melted butter, brown sugar, cinnamon, cornstarch, and salt until combined. Measure into ½ tablespoon balls and set aside.
  2. Prepare the streusel topping: Mix brown sugar, flour, oats, cinnamon, salt, and melted butter until crumbles form. Set aside.
  3. Make the cookie dough: Cream butter and sugars until light and fluffy.
  4. Beat in egg yolks and vanilla.
  5. Whisk together flour, baking powder, baking soda, and salt. Add to creamed mixture and mix until just combined.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop cookies and place six per sheet. Flatten dough, add a dollop of cinnamon filling, and fold dough around it.
  8. Roll into balls and flatten to 1cm thick.
  9. Press streusel topping onto each cookie.
  10. Bake for 8-10 minutes until edges are set.
  11. Cool completely on the baking sheets.
  12. Whisk together glaze ingredients and drizzle over cooled cookies.

Notes

  • Re-soften the cinnamon filling balls by squishing them between your fingers before adding to the cookie dough.
  • Press the cookies down gently to ensure they are about 1cm thick.
  • Use almost all of the streusel topping for the best flavor and texture.
  • Scoot the cookies immediately after baking to help them keep their shape.
