Description
Çılbır (Turkish Eggs) is a classic Turkish breakfast made with perfectly poached eggs served over garlicky Greek yogurt and finished with a warm butter sauce infused with paprika or chili flakes.

- 1 cup full-fat Greek yogurt
- 1 clove garlic, finely grated or minced
- Salt, to taste
- 4 large eggs
- 1 tablespoon white vinegar
- 3 tablespoons unsalted butter
- 1 teaspoon paprika or Aleppo pepper
- 1/4 teaspoon chili flakes (optional)
- Fresh dill or parsley, chopped
- Extra paprika or chili flakes
Instructions
- Mix Greek yogurt, garlic, and salt until smooth. Set aside at room temperature.
- Simmer water with vinegar. Poach eggs for 3–4 minutes until whites are set and yolks are runny.
- Melt butter over low heat. Stir in paprika and chili flakes and heat briefly until fragrant.
- Spread yogurt on plates, top with poached eggs, and spoon warm butter sauce over everything.
- Finish with fresh herbs and extra spice if desired. Serve immediately.
