Description

Çılbır (Turkish Eggs) is a classic Turkish breakfast made with perfectly poached eggs served over garlicky Greek yogurt and finished with a warm butter sauce infused with paprika or chili flakes.


Ingredients

  • 1 cup full-fat Greek yogurt
  • 1 clove garlic, finely grated or minced
  • Salt, to taste
  • 4 large eggs
  • 1 tablespoon white vinegar
  • 3 tablespoons unsalted butter
  • 1 teaspoon paprika or Aleppo pepper
  • 1/4 teaspoon chili flakes (optional)
  • Fresh dill or parsley, chopped
  • Extra paprika or chili flakes

Instructions

  1. Mix Greek yogurt, garlic, and salt until smooth. Set aside at room temperature.
  2. Simmer water with vinegar. Poach eggs for 3–4 minutes until whites are set and yolks are runny.
  3. Melt butter over low heat. Stir in paprika and chili flakes and heat briefly until fragrant.
  4. Spread yogurt on plates, top with poached eggs, and spoon warm butter sauce over everything.
  5. Finish with fresh herbs and extra spice if desired. Serve immediately.
