- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups fresh or frozen cranberries
- ½ cup sugar
- ½ cup water
- 1 teaspoon lemon zest
- 1 ½ cups heavy cream
- 1 cup white chocolate chips
- ½ teaspoon vanilla extract

Instructions
- Line a springform pan with parchment paper and preheat oven to 325°F (160°C).
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream.
- Pour batter into the pan and bake 45–55 minutes until edges are set and center is slightly jiggly. Cool completely, then chill 2 hours.
- Cook cranberries, sugar, water, and lemon zest for 10–12 minutes until thickened. Cool completely and spread over chilled cheesecake.
- Melt white chocolate and cool slightly. Whip cream with vanilla to soft peaks, then fold in chocolate. Spread mousse over jam layer.
- Refrigerate the entire cheesecake for 6–8 hours or overnight for perfect slicing and stable layers.
- Garnish with cranberries, chocolate shavings, whipped cream, or mint. Slice and enjoy!
