- 1 1/2 cups (180g) crushed graham cracker crumbs
- 2 tablespoons (25g) granulated sugar
- 1/4 teaspoon salt
- 6 tablespoons (85g) unsalted butter, melted
- 24 oz (680g) cream cheese, room temperature
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) sour cream
- 1 lb (450g) fresh strawberries, cleaned and dried
- 8 oz (225g) bittersweet or semi-sweet chocolate, chopped
- 1 tablespoon (14g) coconut oil or neutral oil (optional)
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and salt. Stir in melted butter, press into a 9-inch springform pan, and bake for 10 minutes. Cool slightly.
- Beat cream cheese until smooth. Gradually add sugar and beat until fluffy. Add eggs one at a time, then mix in vanilla and sour cream until fully combined.
- Pour filling over crust and tap gently to release air bubbles. Bake for 50–60 minutes until edges are set and center slightly jiggles. Turn off oven, crack door, and cool inside for 1 hour. Refrigerate at least 4 hours or overnight.
- Melt chocolate (with coconut oil if using) in 20-second intervals until smooth. Dip strawberries halfway and place on parchment paper to set.
- Arrange chocolate-dipped strawberries on top just before serving. Slice and serve chilled.
