Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • For the dressing: 3 tbsp olive oil, 1 tbsp lime juice, 1 tsp honey, 1/2 tsp chili powder, salt and pepper to taste

Instructions

  1. In a bowl, toss the shrimp with 2 tbsp olive oil, chili powder, cumin, garlic powder, cayenne pepper (if using), salt, and pepper.
  2. Marinate the shrimp for at least 15 minutes at room temperature, or longer in the refrigerator.
  3. While the shrimp marinates, prepare the dressing by whisking together 3 tbsp olive oil, 1 tbsp lime juice, honey, 1/2 tsp chili powder, salt, and pepper in a small bowl.
  4. Heat a skillet or grill pan over medium-high heat.
  5. Add the marinated shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  6. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, and cilantro.
  7. Add the cooked chili lime shrimp and diced avocado to the salad.
  8. Drizzle the prepared dressing over the salad.
  9. Toss gently to combine all ingredients.
  10. Serve immediately for the best chili lime shrimp salad experience.
