Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- 8 ounces pasta (penne or spaghetti work well)
- 1 cup chicken broth
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish (optional)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides. Remove chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.

- Return the cooked chicken to the skillet.
- Sprinkle the mozzarella and Parmesan cheeses over the top. Cover and cook for 2-3 minutes, or until the cheese is melted and bubbly.
