Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 ounces fettuccine pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can crushed tomatoes
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Cook fettuccine according to package directions. Drain and set aside.
- While the pasta cooks, heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, diced tomatoes with green chilies, Italian seasoning, salt, and pepper. Bring to a simmer.
- Reduce heat to low and stir in heavy cream and Parmesan cheese until well combined and smooth.
- Return the cooked chicken to the skillet. Add the drained fettuccine pasta and stir gently to coat everything in the sauce.
- Sprinkle the shredded mozzarella cheese evenly over the top of the Chicken Alfredo Bake.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the bake is heated through.
