Chewy Almond Cherry Cookies are soft, fruity, and nutty with a blend of almond extract and maraschino cherries.
Ingredients

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped maraschino cherries (drained and patted dry)
- Optional: sliced almonds or melted white chocolate for garnish
Instructions
- Heat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat softened butter and sugar for 2–3 minutes until light and fluffy.
- Mix in egg, vanilla extract, and almond extract until fully combined.
- In another bowl, whisk flour, baking powder, and salt. Add to wet mixture and mix just until combined.
- Gently fold in chopped, dried maraschino cherries without overmixing.
- Scoop dough onto baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes until edges are lightly golden.
- Let cookies cool on the sheet for 2 minutes, then transfer to a wire rack. Add almonds or drizzle with white chocolate if desired.
