- 2 cans (21 ounces each) cherry pie filling
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and 1/4 cup granulated sugar.
- Pour in melted butter and stir until crumbs are moistened.
- Press the mixture evenly into the bottom and up the sides of a 9-inch pie plate to create your graham cracker crust.
- Bake the graham cracker crust for 8-10 minutes, or until lightly golden. Let cool completely.
- In a saucepan, whisk together cherry pie filling, 1/4 cup granulated sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and stir in vanilla extract.
- Pour the cherry pie filling into the cooled graham cracker crust.
- Chill the cherry pie for at least 2 hours before serving.
Notes
- For a firmer crust, you can bake it a few minutes longer.
- Ensure the crust is completely cooled before adding the filling.
- Adjust sugar in the filling to your taste.
