- 1 cup crushed vanilla wafer cookies
- 1/2 cup finely chopped pecans or walnuts
- 1 tablespoon honey or maple syrup
- 1/4 cup non-alcoholic bourbon substitute (apple cider, ginger ale, or bourbon-flavored syrup)
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- 1/2 cup powdered sugar (for rolling)
- Additional cocoa powder (optional, for extra decoration)
Instructions
- Chop dried cherries into small pieces. Crush vanilla wafer cookies into fine crumbs. Finely chop the pecans or walnuts.
- In a large bowl, combine chopped cherries, cookie crumbs, chopped nuts, cocoa powder, cinnamon (if using), and vanilla extract. Stir to combine.
- Add honey or maple syrup, then pour in the non-alcoholic bourbon substitute. Mix until the mixture forms a thick dough-like consistency. If too dry, add more honey or syrup.
- Roll mixture into 1-inch balls using your hands. Ensure even sizes for consistency.
- Roll each ball in powdered sugar until fully coated. Optionally, roll in cocoa powder for extra decoration.
- Place the coated balls on a plate lined with wax or parchment paper. Chill in the refrigerator for at least 1 hour for firm texture.
