- 1 cup pitted fresh or frozen cherries
- 1/4 cup amaretto liqueur
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1 pound mascarpone cheese
- 1 cup strong brewed coffee, cooled
- 24 ladyfingers
- 2 tablespoons unsweetened cocoa powder
Instructions
- In a small bowl, combine the cherries and amaretto. Set aside.
- In a medium bowl, whisk the egg yolks and sugar until light and fluffy.
- In a separate bowl, beat the mascarpone until smooth.
- Fold the mascarpone into the egg yolk mixture until well combined.
- Quickly dip the ladyfingers into the coffee, then arrange a single layer in the bottom of an 8×8-inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherry-amaretto mixture.
- Repeat the layers of ladyfingers, mascarpone, and cherries.
- Dust the top with cocoa powder.
- Refrigerate for at least 6 hours, or up to 3 days, before serving.
