Ingredients

  • 1 cup pitted fresh or frozen cherries
  • 1/4 cup amaretto liqueur
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 pound mascarpone cheese
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfingers
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. In a small bowl, combine the cherries and amaretto. Set aside.
  2. In a medium bowl, whisk the egg yolks and sugar until light and fluffy.
  3. In a separate bowl, beat the mascarpone until smooth.
  4. Fold the mascarpone into the egg yolk mixture until well combined.
  5. Quickly dip the ladyfingers into the coffee, then arrange a single layer in the bottom of an 8×8-inch baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherry-amaretto mixture.
  7. Repeat the layers of ladyfingers, mascarpone, and cherries.
  8. Dust the top with cocoa powder.
  9. Refrigerate for at least 6 hours, or up to 3 days, before serving.
