Description

These cheesy mashed potato balls, made crispy in an air fryer, are a perfect appetizer. They are easy to prepare and use leftover mashed potatoes for a delicious snack.


Ingredients

  • 2 cups mashed potatoes (chilled and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt, to taste
  • Pepper, to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  1. Prepare the mashed potatoes by ensuring they are chilled and firm.
  2. Mix the chilled mashed potatoes with the shredded cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Scoop out small portions of the mixture and roll them into balls about 1-2 inches in diameter.
  4. Coat each potato ball in breadcrumbs until fully covered.
  5. Preheat the air fryer to 375°F (190°C) and place the cheesy mashed potato balls in a single layer in the basket.
  6. Air fry for about 10-12 minutes until golden brown and crispy. These air fryer potato croquettes make a great snack.
