This cheesy ground beef and potato casserole is a hearty and comforting one-dish meal. Layers of tender potatoes, savory ground beef, and melted cheddar and Parmesan cheese make it a family favorite. It’s easy to prepare and delicious served fresh or as leftovers.
Ingredients
- 1 lb ground beef
- 4–5 medium potatoes thinly sliced
- 1 tbsp olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1/2 cup beef broth
- 1/4 cup milk optional
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and thinly slice the potatoes into ¼-inch rounds.
- Heat olive oil in a skillet over medium heat. Sauté chopped onions and minced garlic until fragrant.
- Add ground beef, season with Italian seasoning, paprika, salt, and pepper. Cook until browned, breaking it apart with a spatula.
- Grease a baking dish. Layer half of the sliced potatoes at the bottom.
- Top with half of the cooked beef and sprinkle half of the shredded cheddar cheese.
- Repeat the layers with the remaining potatoes, beef, and cheddar cheese.
- Pour beef broth evenly over the top. Add milk if using for extra richness.
- Cover the dish tightly with foil. Bake for 35–40 minutes, or until the potatoes are fork-tender.
- Remove the foil. Sprinkle with Parmesan cheese and bake uncovered for another 10 minutes until bubbly and golden brown.
- Let the casserole rest for 5 minutes before slicing and serving. Garnish with fresh parsley.
Notes
- Slice potatoes as evenly and thinly as possible so they cook uniformly.
- Milk adds creaminess but can be omitted.
- Use lean ground beef or substitute with ground turkey.
- For a different flavor, try mozzarella or Monterey Jack cheese.
- This cheesy ground beef dish can be assembled up to 24 hours ahead and refrigerated before baking.
