Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons finely chopped fresh herbs (such as rosemary, thyme, and chives)
- 3–4 tablespoons ice water
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or two forks until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese and fresh herbs.
- Add the ice water 1 tablespoon at a time, mixing gently with a fork, until the dough just begins to come together.
- Turn the dough out onto a lightly floured surface and knead briefly, about 30 seconds, until the dough forms a smooth ball.
- Roll the dough out to 1/8-inch thickness. Use a 2-inch cookie cutter or biscuit cutter to cut out round crackers.
- Transfer the crackers to the prepared baking sheet, spacing them about 1 inch apart.
- Bake for 12-15 minutes, or until the crackers are golden brown and crispy.
- Allow the crackers to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
