Instructions

  1. Cook diced apples with brown sugar and cinnamon in a medium saucepan over medium heat for about 5 minutes until softened. Allow to cool completely.
  2. Cream softened butter, dark brown sugar, granulated sugar, and vanilla in a mixing bowl until fluffy. Beat in the egg until fully incorporated.
  3. Whisk together flour, baking soda, and salt in a separate bowl. Gradually fold the dry mixture into the wet mixture until just combined.
  4. Gently incorporate the cooled apple mixture into the dough in two stages. If the dough is too soft, refrigerate briefly.
  5. Preheat oven to 350 °F (175 °C). Line baking sheets with parchment paper.
  6. Scoop portions of dough onto the prepared baking sheets, spacing them evenly.
  7. Bake for 10–12 minutes, until the edges are golden and the centers are set.
  8. Transfer cookies to a wire cooling rack to cool slightly.
  9. Once cooled, generously drizzle each cookie with salted caramel sauce before serving.
