- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup apricot preserves
- 1 cup shelled, roasted, and salted pistachios, chopped
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal.
- In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, scraping down the sides as needed.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Spread the dough evenly into the prepared baking pan. Bake for 18-22 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan.
- Once cooled, spread the apricot preserves evenly over the top of the bars. Sprinkle the chopped pistachios over the preserves.
- Lift the bars out of the pan using the parchment paper overhang and cut into squares.
