Ingredients
Scale
- 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- ½ teaspoon curry powder
- 1 tablespoon Greek yogurt
- 3 tablespoons vegetable oil
- 3 tablespoons butter, divided
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 15-ounce can tomato sauce
- 1 teaspoon sugar
- 1 teaspoon salt, adjust to taste
- ½ teaspoon black pepper
- 2 cups heavy cream
- ½ teaspoon cayenne pepper, optional for heat
- 1 teaspoon garam masala
- ½ teaspoon curry powder
- ¼ cup freshly chopped parsley, optional for garnish
- Naan bread
- Steamed rice
Instructions
- In a mixing bowl, combine the chicken chunks with 1 teaspoon salt, garlic powder, sweet paprika, and curry powder. Add the Greek yogurt and mix well to coat the chicken evenly. Allow it to marinate for at least 15 minutes.
- Heat vegetable oil and 1 tablespoon of butter in a large skillet over medium heat. Add the marinated chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and diced onion. Sauté until the onion is translucent and fragrant.
- Pour in the tomato sauce, sugar, salt, black pepper, and cayenne pepper (if using). Stir to combine and let it cook for about 5 minutes.
- Lower the heat and add the heavy cream, garam masala, and additional curry powder. Mix well and allow it to simmer gently for about 5 minutes.
- Return the cooked chicken to the skillet and stir to coat in the sauce. Let it simmer for another 5–10 minutes, allowing the flavors to meld.
- Garnish with freshly chopped parsley if desired. Serve hot with warm naan and steamed rice.
Notes
- For deeper flavor, marinate the chicken for at least 30 minutes or even overnight.
- Adjust cayenne pepper according to your heat preference; skip it for a milder version.
- Allow the curry to simmer gently to blend flavors and prevent the cream from curdling.
- You can add peas or bell peppers for added nutrition and color.
- Feel free to adjust curry powder and garam masala quantities based on your taste preferences.
