  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 pint fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold butter, cut into pieces

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper.
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/3 cup melted butter. Press mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and 3/4 cup granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
  4. Pour cream cheese mixture over the graham cracker crust.
  5. In a separate bowl, gently toss blueberries with 2 tablespoons granulated sugar and cornstarch. Spoon blueberry mixture over the cream cheese.
  6. In another bowl, combine flour, brown sugar, and 1/4 cup cold butter. Cut in butter with a pastry blender or your fingers until mixture resembles coarse crumbs. Sprinkle this crumble topping evenly over the blueberries.
  7. Bake for 50-60 minutes, or until the center is almost set. The edges should be firm.
  8. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  9. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a smoother crumble topping, ensure the butter is very cold.
  • You can substitute other berries like raspberries or mixed berries for the blueberries.
  • If you don’t have a springform pan, you can use a regular 9-inch pie plate, but baking and cooling times may vary.
