Description

Ingredients

  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ¾ cup buttermilk (or regular milk with 1 tablespoon vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest (optional, for added freshness)
  • 1 tablespoon butter, melted
  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
  3. Add cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
  4. Pour in the buttermilk and stir gently until just combined. Be careful not to overmix the dough.
  5. Gently fold in the blueberries and lemon zest (if using), being careful not to crush them.
  6. Turn the dough out onto a floured surface and lightly pat into a rectangle. Use a round cutter to cut out the biscuits, pressing straight down without twisting.
  7. Place the biscuits on the prepared baking sheet. If desired, brush with melted butter and sprinkle with sugar. Bake for 12-15 minutes, until golden brown.
  8. Allow the biscuits to cool slightly before serving. Enjoy warm with butter, jam, or whipped cream.
