- ½ cup cold unsalted butter, cubed
- ¾ cup buttermilk (or regular milk with 1 tablespoon vinegar)
- 1 cup fresh or frozen blueberries
- 1 teaspoon lemon zest (optional, for added freshness)
- 1 tablespoon butter, melted
- 1 tablespoon sugar (for sprinkling)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
- Add cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
- Pour in the buttermilk and stir gently until just combined. Be careful not to overmix the dough.
- Gently fold in the blueberries and lemon zest (if using), being careful not to crush them.
- Turn the dough out onto a floured surface and lightly pat into a rectangle. Use a round cutter to cut out the biscuits, pressing straight down without twisting.
- Place the biscuits on the prepared baking sheet. If desired, brush with melted butter and sprinkle with sugar. Bake for 12-15 minutes, until golden brown.
- Allow the biscuits to cool slightly before serving. Enjoy warm with butter, jam, or whipped cream.
