  • 1 ½ cups (150 g) graham cracker crumbs
  • ½ cup (115 g) unsalted butter
  • 24 oz (680 g) cream cheese
  • 1 cup (200 g) granulated sugar
  • 3 large eggs
  • 1 cup (240 ml) sour cream
  • 1 tsp (5 g) vanilla extract
  • 1 cup (170 g) dark chocolate
  • 1 cup (150 g) tart cherries
  • 2 tbsp (30 ml) cherry juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine crushed graham cracker crumbs with melted unsalted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes until golden and set, then cool completely.
  5. Beat softened cream cheese with granulated sugar until smooth.
  6. Add room temperature eggs one at a time, mixing well after each.
  7. Fold in sour cream and vanilla extract until combined.
  8. Gently mix in melted dark chocolate until fully incorporated.
  9. Pour filling over the cooled crust and smooth the top.
  10. Bake for 50-60 minutes until edges are set with a slight jiggle.
  11. Cool the cheesecake in the oven for about an hour.
  12. Refrigerate for at least 4 hours or overnight to firm up.
