- 1 ½ cups (150 g) graham cracker crumbs
- ½ cup (115 g) unsalted butter
- 24 oz (680 g) cream cheese
- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 cup (240 ml) sour cream
- 1 tsp (5 g) vanilla extract
- 1 cup (170 g) dark chocolate
- 1 cup (150 g) tart cherries
- 2 tbsp (30 ml) cherry juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine crushed graham cracker crumbs with melted unsalted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes until golden and set, then cool completely.
- Beat softened cream cheese with granulated sugar until smooth.
- Add room temperature eggs one at a time, mixing well after each.
- Fold in sour cream and vanilla extract until combined.
- Gently mix in melted dark chocolate until fully incorporated.
- Pour filling over the cooled crust and smooth the top.
- Bake for 50-60 minutes until edges are set with a slight jiggle.
- Cool the cheesecake in the oven for about an hour.
- Refrigerate for at least 4 hours or overnight to firm up.
