Ingredients

  • 2 large sweet onions, cut into bite-sized wedges
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder

  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon horseradish (optional)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cut the Onions: Peel and cut the onions into bite-sized wedges, keeping the layers intact.
  2. Soak in Buttermilk: Place the onion wedges in a bowl of buttermilk and let them soak for 10 minutes.
  3. Mix Dry Ingredients: In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne pepper, and salt.
  4. Set Up Breading Station: Place panko breadcrumbs in a separate dish.
  5. Dredge in Flour Mixture: Remove the onions from the buttermilk, letting excess drip off, and coat them in the flour mixture.
  6. Dip Back into Buttermilk: Return the coated onions to the buttermilk.
  7. Coat with Panko: Roll the onions in panko breadcrumbs until fully coated.
  8. Heat Oil: In a deep skillet or pot, heat vegetable oil to 350°F (175°C).
  9. Fry in Batches: Fry the onions in small batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.
  10. Mix Ingredients: In a small bowl, combine mayonnaise, ketchup, Worcestershire sauce, horseradish, smoked paprika, and garlic powder. Season with salt and pepper to taste.
  11. Serve: Arrange the blooming onion bites on a platter and serve with the dipping sauce.
