Ingredients
For the Fajitas:
- 1 ½ lbs flank steak (or skirt steak, sliced into strips)
- 3 bell peppers (red, yellow, and green, sliced)
- 1 large red onion (sliced)
- 3 tbsp olive oil
- Juice of 1 lime
- 1 tbsp soy sauce (or coconut aminos for a gluten-free option)
For the Seasoning:
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional for heat)
Optional Toppings:
- Fresh cilantro
- Sliced avocado
- Sour cream or Greek yogurt
- Shredded cheese
- Warm tortillas
Instructions
Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
In a bowl, whisk together olive oil, lime juice, soy sauce, and all the spices. Add the steak strips, ensuring they’re well-coated. Let it marinate for at least 15 minutes (or overnight for deeper flavor).
While the steak marinates, slice your bell peppers and onions into thin strips.
Spread the marinated steak and veggies evenly on the sheet pan. Drizzle with a little extra olive oil and toss gently.
Bake for 15-18 minutes, flipping halfway through. For a charred, restaurant-style finish, broil for the last 2 minutes.
Remove from the oven and squeeze fresh lime juice over everything. Serve immediately with warm tortillas and your favorite toppings.
Notes
- Use high-quality steak: Flank or skirt steak works best.
- Don’t overcook the steak: Remove it from the oven when it reaches medium-rare to medium (135-145°F) for the juiciest texture.
- Marinate for maximum flavor: The longer you marinate, the better the flavor.
- Slice against the grain: This keeps the steak tender and easy to chew.
