Description

Welcome to this delicious and easy Japanese Curry Recipe! If you’re looking for a hearty, flavorful, and satisfying dish, you’ve come to the right place. This homemade Japanese curry is packed with tender meat, savory vegetables, and a rich, slightly sweet curry sauce. Perfect for a cozy family dinner, this recipe is simple enough for beginners while offering an authentic taste that rivals restaurant-quality curry.

Ingredients

Scale

Main Ingredients:

  • 1 lb (450g) beef, chicken, or pork, cut into bite-sized pieces
  • 1 large onion, sliced
  • 2 medium carrots, chopped
  • 1 large potato, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tbsp vegetable oil
  • 3 cups water or chicken broth
  • 1 apple (Fuji or Honeycrisp), grated
  • 1 tbsp honey (optional)

For the Curry Sauce (Roux):

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • ½ tbsp ketchup
  • Salt and pepper to taste

Instructions

Step1: Sauté the Aromatics

Heat vegetable oil in a large pot over medium heat. Add sliced onions and sauté until golden brown (about 10 minutes). Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Step2: Brown the Meat

Add the beef (or chicken/pork) to the pot and cook until browned on all sides. Season with salt and pepper for added depth of flavor.

Step3: Add Vegetables and Simmer

Toss in the chopped carrots and potatoes. Pour in water or chicken broth and bring to a gentle boil. Lower the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.

Step4: Make the Curry Roux

In a separate pan, melt butter over low heat. Stir in the flour and cook for about 5 minutes, stirring constantly, until it turns golden brown. Add curry powder, garam masala, and mix well. Gradually add Worcestershire sauce, soy sauce, and ketchup, stirring until smooth.

Step5: Combine and Simmer

Slowly mix the roux into the simmering pot of meat and vegetables. Stir continuously to avoid lumps. Add the grated apple and honey for a subtle sweetness. Simmer for another 10 minutes until the curry thickens.

Step6: Serve and Enjoy

Ladle the Japanese curry over a bowl of steamed rice. Garnish with chopped parsley or serve with crispy katsu (breaded pork cutlet) for an indulgent meal.

Notes

  • Use pre-made curry roux cubes if you want a shortcut to making this dish faster.
  • Grated apple and honey enhance sweetness, balancing the spice level.
  • Simmer longer for deeper flavors, as the sauce thickens and develops more richness over time.
