  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust for spice level)
  • 1 teaspoon dried oregano

  • ½ cup olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Chicken Thighs:

  • 46 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

Step1: Prepare the Chimichurri Sauce

  1. In a small bowl, combine parsley, cilantro, garlic, oregano, and red pepper flakes.
  2. Stir in red wine vinegar and olive oil, then season with salt and black pepper.
  3. Mix well and let it sit for at least 10-15 minutes to allow flavors to blend.

Step2: Season the Chicken

  1. Pat dry the chicken thighs using paper towels.
  2. Season both sides with salt, black pepper, paprika, and garlic powder.
  3. Rub olive oil over the chicken to ensure even seasoning.

Step3: Cook the Chicken

Oven-Baked Method:

  1. Preheat oven to 400°F (200°C).
  2. Heat a cast-iron skillet over medium-high heat. Place chicken skin-side down and sear for 5 minutes until crispy.
  3. Flip the chicken, spoon half of the chimichurri sauce over the thighs, and transfer to the oven.
  4. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

Grill Method:

  1. Preheat grill to medium-high heat.
  2. Place chicken skin-side down and grill for 5-7 minutes per side.
  3. Brush with chimichurri sauce in the last few minutes of grilling for added flavor.

Step4: Serve and Enjoy!

  1. Let the chicken rest for 5 minutes before serving.
  2. Drizzle with extra chimichurri sauce and garnish with fresh parsley.

Notes

  • Use fresh herbs for the best chimichurri flavor.
  • Marinate the chicken in chimichurri for at least 30 minutes for deeper flavor.
  • Crispy skin? Sear the chicken in a hot pan before baking.
  • Spice it up! Add extra red pepper flakes or a dash of cayenne pepper.
