Ingredients

Scale

Main Ingredients:

  • 1 ½ lbs beef sirloin or ribeye (thinly sliced)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 1 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • 2 tbsp flour (to thicken the sauce)
  • Salt and black pepper, to taste

Optional Additions & Substitutes:

  • Substitute Greek yogurt for sour cream for a healthier version
  • Use chicken or vegetable broth instead of beef broth for a lighter sauce
  • Try portobello mushrooms for a deeper flavor

Instructions

Step1: Sear the Beef

  • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
  • Add the sliced beef and season with salt and pepper.
  • Sear for about 1-2 minutes per side until browned, then remove and set aside.

Step2: Sauté the Aromatics & Mushrooms

  • In the same skillet, add another tbsp of olive oil and sauté the onions until soft.
  • Add the garlic and mushrooms, cooking until golden brown.

Step3: Make the Sauce

  • Stir in the flour and cook for 1 minute.
  • Slowly pour in the beef broth, stirring constantly.
  • Add the Worcestershire sauce and Dijon mustard, letting the sauce thicken for 3 minutes.

Step4: Combine & Finish the Dish

  • Lower the heat and stir in the sour cream until smooth.
  • Return the seared beef to the skillet, mixing well.
  • Simmer for 5 more minutes until the beef is tender.

Step5: Serve & Enjoy

  • Serve over egg noodles, mashed potatoes, or rice.
  • Garnish with fresh parsley for extra flavor.

Notes

  • Best Cut of Beef – Use ribeye, sirloin, or tenderloin for maximum tenderness.
  • Don’t Overcook – Cook beef quickly on high heat to keep it juicy.
  • Enhance the Sauce – Add a splash of white wine for extra depth of flavor.
  • Use Fresh Ingredients – Fresh garlic, mushrooms, and onions make a huge difference.
