- ½ teaspoon Worcestershire sauce
- 1 cup sour cream, at room temperature
- 2 tablespoons fresh parsley, chopped, for garnish

Instructions
- Pat the beef strips dry with paper towels. Season with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add half of the beef and sear until browned on all sides, about 2-3 minutes. Remove beef from the skillet and set aside. Repeat with remaining beef.
- Add sliced onion to the skillet and cook until softened, about 5 minutes.
- Stir in the sliced mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in beef broth, Dijon mustard, and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return the seared beef to the skillet. Reduce heat to low and simmer for 5-10 minutes, allowing the flavors to meld.
- Remove the skillet from the heat. Gradually stir in the sour cream until well combined. Do not boil after adding sour cream, as it may curdle.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley and serve your homemade Beef Stroganoff immediately over egg noodles, rice, or mashed potatoes.
