  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup cooked black beans (or pinto beans)
  • 1 can (10 oz) diced tomatoes with green chilies
  • ½ cup corn kernels (fresh, canned, or frozen)
  • ½ cup beef broth (or water)
  • 4 small flour tortillas, cut into strips
  • 1 cup shredded cheddar cheese

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Diced avocado
  • Sliced jalapeños
  • Salsa or pico de gallo

Instructions

Step1: Cook the Beef

In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if needed.

Step2: Sauté Onions & Garlic

Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until fragrant.

Step3: Season & Simmer

Stir in taco seasoning, diced tomatoes, corn, and black beans. Pour in beef broth and let simmer for 5 minutes.

Step4: Add Tortilla Strips

Mix in tortilla strips and stir gently to coat them in the sauce.

Step5: Melt the Cheese
