Ingredients

Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, about 8–9 minutes. Reserve ½ cup of the pasta water before draining.

- Sauté the Garlic: In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic and sauté until fragrant, about 30–60 seconds.
- Make the Sauce: Pour in the heavy cream and bring to a gentle simmer, stirring constantly for about 3–5 minutes. Gradually add the parmesan cheese, stirring until melted and the sauce is smooth. Add a splash of reserved pasta water if the sauce is too thick.
- Combine Everything: Return the cooked beef to the skillet and stir to coat it in the sauce. Then, fold in the drained rotini, gently tossing until evenly coated and heated through. Taste and adjust seasoning.
- Garnish and Serve: Finish with chopped parsley and extra parmesan. Serve immediately while hot.
